Vegetable Pizza
One of my colleagues was generous enough to share this recipe with me and wanted to pass it on. I will take any help with preparing a dinner for five people. If you have a recipe you would like to share please email me @ karen@bellaandgracies.com, I would love to pass it on as well.
I had to share this recipe with other moms because it is so tasty and the best part is the kids will eat it! I joined the Pampered Chef just recently and this is the recipe I made for my first show.
Ingredients:
pilsbury pizza crust (or whatever kind you like)
1 lg tomato
1 med zucchini
1 c. sliced mushrooms
1 small onion ( I use sweet onions)
1 c. shredded mozzarella cheese (4 oz block)
1 c. shredded cheddar cheese (4 oz block)
1/4 grated fresh Parmesan cheese (1oz block)
1 tsp. vegetable oil
2 cloves garlic
1 tsp Italian seasoning
Preheat your oven to 400 degrees. Unroll dough onto bottom of lightly greased Large Bar Pan. Gently stretch dough to evenly cover the bottom of the pan. Place oil in Prep Bowl, Press garlic into oil with Garlic Press; brush evenly over dough using Chef’s Silicone Basting Brush. Bake crust 7 minutes. Rove from oven; place on Stackable Cooling Rack.
Meanwhile, grate cheddar cheese and mozzarella cheeses using the Ultimate Mandoline (ask me what i use instead) fitted with grating blade; place in Classic Batter Bowl. Grate Parmesan cheese over batter bowl using Microplane Adjustable Grater. Add Italian seasoning to cheeses using Easy Adjustable Measuring Spoon; toss lightly using Small Mix ‘N Scraper and set aside. using Ultimate Mandoline, slice onion and tomatoes using v-shaped blade; slice zucchini suing crinkle cut blade. Slcie mushrooms using Utility Knife.
Sprinkle half of the cheese mixture evenly over crust; top evenly with onion, zucchini, tomatoes and mushrooms. Sprinkle with remaining cheese mixture. Bake for 15-18 minutes or until crust is golden brown; remove from oven to cooling rack. Cut into squares using Pizza Cutter. Serve using Mini-Serving Spatula.
